When he asked me for suggestions all I could offer was "pemmican...?" But who wants to eat that for a whole week?
So. He did his research and planning, counted up calories (to make sure he would have enough!) and here is what he took:
scrambled egg crystals
Via ready brew coffee
homemade trail mix
(or the occasional snickers)
turkey and beef jerky sticks
tuna in packets
dried sweet potatoes (can't find, but here are the carrots which would be similar, perhaps)
dried bell pepper mix
For cooking and seasoning:
salt & pepper
from dromedary bag (often filled at last stop of the day)
or used Platypus GravityWorks water filter
(mostly given away in tough moments)
single serve gatorade or true lemon packets + water

My husband also said he ate several Cobb salads from restaurants, and the occasional steak and shepherd's pie, as well.
He was happy with his selections.
